Protein-Packed Egg-Fried Rice with Ground Turkey, Broccoli & Cauliflower
Tough to hand out a MVP in this recipe. The scrambled eggs and ground turkey add protein and flavor, the broccoli and cauliflower add some color and texture, and the rice soaks up all the juices.

Ingredients:
- rice
- Broccoli
- Cauliflower
- Ground turkey
- Eggs
- Oil or Butter
Seasoning:
- 1 part salt
- 1 part black pepper
Equipment Needed:
- Pan
- Pot
- Stovetop
Step 1: Cook rice according to package instructions
Step 2: Heat oil or butter in a pan over medium heat
Step 3: Cook ground turkey for 7-10 minutes, stirring occasionally, until no longer pinkStep 4: Crack eggs into a bowl and whisk until yolks and whites are combined
Step 5: Heat oil or butter in a pan over medium heat
Step 6: Cook eggs until they reach desired consistency. Stir frequently.
Step 7: Chop broccoli and cauliflower into bite-sized pieces
Step 8: Heat oil or butter in a pan over medium heat
Step 9: Saute broccoli for 5-10 minutes, until broccoli becomes crispy and golden-brown.
Step 10: Add the rice, turkey, and eggs to the pan with the broccoli and stir to combine
Step 11: Serve the fried rice and enjoy!
