Garlic-Lemon Chicken & Zucchini with Quinoa
Not your ordinary chicken & veggies recipe. The garlic-lemon duo elevate this simple dish to new heights and the quinoa soaks up all those delicious juices.

Ingredients:
- chicken
- quinoa
- zucchini
- oil or butter
Seasoning:
- garlic powder or minced garlic
- lemon juice and/or lemon zest
Equipment Needed:
- Pan
- Pot
- Stovetop
Step 1: Cook quinoa according to package instructions
Step 2: Oil and season chicken
Step 3: Heat oil or butter in a pan over medium-high heat
Step 4: Cook chicken for 5 minutes, reduce heat to low, flip chicken, cover the pan, and cook for 10 more minutes
Step 5: Dice zucchini into small pieces
Step 6: Heat oil or butter in a pan over medium heat
Step 7: Saute zucchini for 7-10 minutes, until zucchini begin to brown on the outside and develop a slight crunch. Stir occasionally, every 2-3 minutes or so.
Step 8: Plate chicken, quinoa, and zucchini together and serve!
