Pan-Cooked Cod with Spinach & Rice
When cooking fish, there’s no need to overdo it. Cook the cod (or any whitefish like tilapia or halibut) for a few minutes in a generous amount of butter or oil and pair with some simple sautéed spinach and a serving of rice. A classy, healthy dinner ready in no time.

Ingredients:
- cod (or any white fish)
- rice
- spinach
- oil or butter
Seasoning:
- lemon juice or lemon zestr
- white pepper (black pepper is fine, too)
- salt
Equipment Needed:
- Pan
- Pot
- Stovetop
Step 1: Cook rice according to package instructions
Step 2: Oil and season cod (or any white fish)
Step 3: Heat oil or butter in a pan over medium-high heat
Step 4: Cook cod for 2-4 minutes per side, until easily pierced with a fork. If you have enough oil or butter in your pan, use a spoon to baste the fish after you flip it
Step 5: Rinse spinach under some water and then dry the spinach
Step 6: Heat oil or butter in a pan over medium heat
Step 7: Saute spinach 3-5 minutes, until spinach is wilted. Stir the spinach every minute or so.
Step 8: Plate cod (or any white fish), rice, and spinach together and serve!
