Pan-Fried Chicken with Sauteed Zucchini & Baked Tater
Easy to make, healthy to eat, and oh so tasty. This recipe scales nicely so cook in bulk and have some meals ready to go for the rest of the week!

Ingredients:
- chicken
- potato
- zucchini
- oil or butter
Seasoning:
- 1 part salt
- 1 part black pepper
Equipment Needed:
- Pan
- Oven
- Stovetop
Step 1: Preheat oven to 400 F, poke a few holes in the potato, and bake for an hour until inside is soft
Step 2: Oil and season chicken
Step 3: Heat oil or butter in a pan over medium-high heat
Step 4: Cook chicken for 5 minutes, reduce heat to low, flip chicken, cover the pan, and cook for 10 more minutes
Step 5: Dice zucchini into small pieces
Step 6: Heat oil or butter in a pan over medium heat
Step 7: Saute zucchini for 7-10 minutes, until zucchini begin to brown on the outside and develop a slight crunch. Stir occasionally, every 2-3 minutes or so.
Step 8: Plate chicken, baked potato, and zucchini together and serve!
