Pan-Fried Cod with Sauteed Cauliflower & Baked Potato
This healthy, filling meal only requires a couple minutes of active time. Get the potato started in the oven, go spend 45 minutes doing something productive, then cook up the fish and cauliflower and you got a meal ready.
Active Time: 15 mins Total Time: 60 mins
Ingredients:
- cod (or any white fish)
- potato
- cauliflower
- oil or butter
Seasoning:
- 1 part salt
- 1 part black pepper
Equipment Needed:
- Pan
- Oven
- Stovetop
Step 1: Preheat oven to 400 F, poke a few holes in the potato, and bake for an hour until inside is soft
Step 2: Oil and season cod (or any white fish)
Step 3: Heat oil or butter in a pan over medium-high heat
Step 4: Cook cod for 2-4 minutes per side, until easily pierced with a fork. If you have enough oil or butter in your pan, use a spoon to baste the fish after you flip it
Step 5: Chop cauliflower into bite-sized pieces
Step 6: Heat oil or butter in a pan over medium heat
Step 7: Saute cauliflower for 7-10 minutes, until cauliflower develops a nice golden-brown exterior
Step 8: Plate cod (or any white fish), baked potato, and cauliflower together and serve!
