Pan-Seared Ahi with Spinach & Baked Potato
Seared ahi tuna and sauteed spinach alone can be a meal, but why not throw in a baked potato to really amp this meal up?

Ingredients:
- ahi tuna
- potato
- spinach
- oil or butter
Seasoning:
- 1 part salt
- 1 part black pepper
Equipment Needed:
- Pan
- Oven
- Stovetop
Step 1: Preheat oven to 400 F, poke a few holes in the potato, and bake for an hour until inside is soft
Step 2: Oil and season ahi tuna
Step 3: Heat oil or butter in a pan over high heat
Step 4: Sear ahi tuna for 1-2 minutes per side, until it develops a golden crust, but is still almost raw in the middle
Step 5: Rinse spinach under some water and then dry the spinach
Step 6: Heat oil or butter in a pan over medium heat
Step 7: Saute spinach 3-5 minutes, until spinach is wilted. Stir the spinach every minute or so.
Step 8: Plate ahi tuna, baked potato, and spinach together and serve!
