Rice with Egg, Bell Pepper, Squash, & Zucchini

A great way to use up all of those veggies in your fridge and turn them into a well-rounded, healthy meal.

Prep Time: 30 mins Total Time: 45 mins

Ingredients:

  • Rice
  • Eggs
  • Bell Pepper
  • Squash
  • Zucchini
  • Oil or Butter

Seasoning:

  • 1 part salt
  • 1 part ginger
  • 1 part garlic powder
  • 1 part onion powder

Equipment Needed:

  • Pan
  • Pot
  • Stovetop

Step 1: Boil water in a large pot
Step 2: Cook rice according to package instructions
Step 3: Dice the bell pepper, squash, and zucchini into small pieces (see instructional videos below)
Step 4: Crack egg into a bowl and whisk until yolk and whites area combined
Step 5: Add oil or butter to a pan and heat over medium heat
Step 6: Cook the eggs for 1-2 minutes, until eggs reach desired consistency. Set aside for later.
Step 7: Add oil or butter to a new pan and heat over medium heat
Step 8: Sautee the bell pepper, squash, and zucchini for 5-10 minutes, until veggies develop some color.
Step 9: Combine the rice and eggs with the veggies, mix well, and oil and season to taste.
