One-Pan Roast: Potatoes, Bell Pepper, Squash, Zucchini
This easy vegetarian roast packs great flavor and nutrition with minimal effort.

Ingredients:
- Potatoes
- Bell Pepper
- Squash
- Zucchini
- Oil or Butter
Seasoning:
- 1 part salt
- 1 part black pepper
- 1 part garlic powder
- 1 part rosemary
Equipment Needed:
- Baking Tray
- Oven
Step 1: Preheat oven to 400 F
Step 2: Chop the potatoes, bell pepper, squash, and zucchini into bite-sized pieces (see instructional videos below)
Step 3: Line a baking tray with parchment paper or tinfoil, or grease with butter or oil
Step 4: Place potatoes and veggies on the baking tray and oil and season
Step 5: Bake for 25-30 minutes, until potatoes are soft in the inside and veggies are golden brown
