Seared Ahi Tuna with Fried Squash and Zucchini Quinoa

Ingredients:
- ahi tuna
- quinoa
- squashi
- zucchini
- oil or butter
Seasoning:
- 1 part salt
- 1 part black pepper
Equipment Needed:
- Pan
- Stovetop
Step 1: Cook quinoa according to package instructions
Step 2: Dice squash and zucchini into small pieces
Step 3: Oil and season ahi tuna
Step 4: Heat oil or butter in a pan over high heat
Step 5: Sear ahi tuna for 1-2 minutes per side, until a nice crust develops on each side, but the inside is still almost raw
Step 6: Heat oil or butter in a pan over medium heat
Step 7: Saute squash and zucchini for 7-10 minutes, until squash and zucchini develop a nice golden-brown exterior
Step 8: Add the quinoa to the pan with squash and zucchini and stir well
Step 9: Plate the ahi tuna with the squash and zucchini quinoa and serve!
