Seared Ahi Tuna with Sauteed Squash & Quinoa
The tuna is the deserved star of this dish. Sear each side for a minute, so that the outside forms a nice crust, but the inside is still almost raw. Add some sesame seeds if you’e feel adventurous. Sides of quinoa and sauteed squash round out this easy, but oh-so-fancy meal.

Ingredients:
- tuna
- quinoa
- squash
- oil or butter
Seasoning:
- 1 part salt
- 1 part black pepper
Equipment Needed:
- Pan
- Pot
- Stovetop
Step 1: Cook quinoa according to package instructions
Step 2: Oil and season tuna
Step 3: Heat oil or butter in a pan over high heat
Step 4: Sear tuna for 1-2 minutes per side
Step 5: Dice squash into small pieces
Step 6: Heat oil or butter in a pan over medium heat
Step 7: Saute squash for 7-10 minutes, until squash begins to brown
Step 8: Plate tuna, quinoa, and squash together and serve!
