Pan-Cooked Whitefish with Sauteed Squash & Quinoa
With cooking fish, often simplicity is the key. Cook the cod (or other whitefish like tilapia, halibut, or bass) on the stove with some oil or butter and a pair with sides of quinoa and sautéed squash. Simple, yet elegant.

Ingredients:
- cod
- quinoa
- squash
- oil or butter
Seasoning:
- 1 part salt
- 1 part black pepper
Equipment Needed:
- Pan
- Pot
- Stovetop
Step 1: Cook quinoa according to package instructions
Step 2: Oil and season cod
Step 3: Heat oil or butter in a pan over medium heat
Step 4: Cook cod for 2-4 minutes per side
Step 5: Dice squash into small pieces
Step 6: Heat oil or butter in a pan over medium heat
Step 7: Saute squash for 7-10 minutes, until squash begins to brown
Step 8: Plate cod, quinoa, and squash together and serve!
