Sesame-Ginger Whitefish with Quinoa & Zucchini

Ingredients:
- cod (or any white fish)
- quinoa
- zucchini
- oil or butter
Seasoning:
- -1 part ground or fresh ginger
- -1 part sesame seeds
- -sesame oil
Equipment Needed:
- Pan
- Pot
- Stovetop
Step 1: Cook quinoa according to package instructions
Step 2: Oil and season cod (or any white fish)
Step 3: Heat oil or butter in a pan over medium-high heat
Step 4: Cook cod for 2-4 minutes per side, until easily pierced with a fork. If you have enough oil or butter in your pan, use a spoon to baste the fish after you flip it
Step 5: Dice zucchini into small pieces
Step 6: Heat oil or butter in a pan over medium heat
Step 7: Saute zucchini for 7-10 minutes, until zucchini begin to brown on the outside and develop a slight crunch. Stir occasionally, every 2-3 minutes or so.
Step 8: Plate cod (or any white fish), quinoa, and zucchini together and serve!
