Citrusy Salmon & Spinach with Rice
A little lemon can go a loooong way. See for yourself with this foolproof salmon & spinach recipe. You’ll be using the rice to soak up all those delicious juices leftover on your plate.

Ingredients:
- salmon
- rice
- spinach
- oil or butter
Seasoning:
- lemon juice or lemon zest
- salt
Equipment Needed:
- Pan
- Pot
- Stovetop
Step 1: Cook rice according to package instructions
Step 2: Oil and season salmon
Step 3: Heat oil or butter in a pan over medium heat
Step 4: Cook salmon skin-side down for 2-3 minutes per side. Reduce heat to low, flip salmon, cover, and cook 5 more minutes.
Step 5: Rinse spinach under some water and then dry the spinach
Step 6: Heat oil or butter in a pan over medium heat
Step 7: Saute spinach 3-5 minutes, until spinach is wilted. Stir the spinach every minute or so.
Step 8: Plate salmon, rice, and spinach together and serve!
