Egg-Fried Rice with Squash and Zucchini

Ingredients:

  • rice
  • squash
  • zucchini
  • eggs
  • oil or butter

Seasoning:

  • 1 part salt
  • 1 part black pepper

Equipment Needed:

  • Pan
  • Pot
  • Stovetop

Step 1: Cook rice according to package instructions
Step 2: Crack eggs into a bowl and whisk until yolks and whites are combined
Step 3: Heat oil or butter in a pan over medium heat
Step 4: Cook eggs until they reach desired consistency. Stir frequently.
Step 5: Dice squash and zucchini into small pieces
Step 6: Heat oil or butter in a pan over medium heat
Step 7: Saute squash and zucchini for 7-10 minutes, until squash and zucchini become crispy and golden-brown.
Step 8: Add the rice and eggs to the pan with the squash and zucchini and stir to combine
Step 9: Serve the fried rice and enjoy!
