Spicy Spinach & Tilapia with Baked ’Tater
Sauté some spinach and whitefish (like tilapia or cod) and add your favorite hot sauce for an easy, yet layered meal. Mouth on fire? Take a bite of the baked potato to ease the burn.

Ingredients:
- cod (or any white fish)
- potato
- spinach
- oil or butter
Seasoning:
- asian style hot sauce like sriracha
- crushed red pepper flakes
- paprika
Equipment Needed:
- Pan
- Oven
- Stovetop
Step 1: Preheat oven to 400 F, poke a few holes in the potato, and bake for an hour until inside is soft
Step 2: Oil and season cod (or any white fish)
Step 3: Heat oil or butter in a pan over medium-high heat
Step 4: Cook cod for 2-4 minutes per side, until easily pierced with a fork. If you have enough oil or butter in your pan, use a spoon to baste the fish after you flip it
Step 5: Rinse spinach under some water and then dry the spinach
Step 6: Heat oil or butter in a pan over medium heat
Step 7: Saute spinach 3-5 minutes, until spinach is wilted. Stir the spinach every minute or so.
Step 8: Plate cod (or any white fish), baked potato, and spinach together and serve!
