Teriyaki Ahi Tuna & Zucchini with Quinoa

Three ingredients and some sauce - that's all you need to make this sneakily simple recipe

Ingredients:

  • ahi tuna
  • quinoa
  • zucchini
  • oil or butter

Seasoning:

  • teriyaki sauce
  • sesame oil

Equipment Needed:

  • Pan
  • Pot
  • Stovetop

Step 1: Cook quinoa according to package instructions
Step 2: Oil and season ahi tuna
Step 3: Heat oil or butter in a pan over high heat
Step 4: Sear ahi tuna for 1-2 minutes per side, until it develops a golden crust, but is still almost raw in the middle
Step 5: Dice zucchini into small pieces
Step 6: Heat oil or butter in a pan over medium heat
Step 7: Saute zucchini for 7-10 minutes, until zucchini begin to brown on the outside and develop a slight crunch. Stir occasionally, every 2-3 minutes or so.
Step 8: Plate ahi tuna, quinoa, and zucchini together and serve!
